With coffee, everything is Popsicle.

3 cold brew Popsicle recipes you can make at home this summer! 🏖

I can't tell you how excited I got when I found these cute little Ikea popsicle molds! I then had even more fun experimenting with recipes. These are the perfect little refreshers after a day in the sun, or pool. You can also control how healthy or how indulgent you want them. In all of my recipes I used Oatmilk as I'm trying as much as I can to go dairy free, and quite enjoy the taste! Feel free to use cow's milk or even condensed milk and more sugar for a thicker, creamier consistency. Also, you can spike all of these for a boozy adult version!


1. Creamy Chocolate Chip

  • TOP LAYER: Oatmilk ( I used Minor Figures as it freezes the best!) mixed with a dash of sugar-free caramel syrup, then semi-freeze for about 20 minutes

  • BOTTOM LAYER: Sprinkle chocolate chips on top of the Oatmilk layer, then fill up the Popsicle with Condensed Cold Brew coffee concentrate from Ambros Coffee and add sweetener. I used sugar-free caramel syrup.

  • Lastly, add in the Popsicle stick and freeze completely.


2. Lemony Mojito🍹

  • TOP LAYER: Lemonade and very finely chopped fresh mint

  • BOTTOM LAYER: Condensed Cold Brew coffee concentrate from Ambros Coffee, with a dash of lemon juice and a sprinkle of sugar.

  • Lastly, add in the Popsicle stick and freeze completely.


3. Vanilla Mocha Latte🥛🍫

ONE LAYER: Flash Brew coffee from Escape Coffee Roasters blended with Oatmilk and a few drops of chocolate syrup.

  • Lastly, add in the Popsicle stick and freeze completely.

These are the Cold Brew concentrate from Ambros and Flash Brew coffee from Escape Coffee Roasters that I used! What's the difference? Cold Brew is coffee made from grounds soaked overnight in cold water. This long and slow extraction process removes all the bitterness and acidity from the coffee. Flash brew is hot coffee brewed directly onto ice using filters ( or pour over). The ice immediately cools down the coffee.


Summer is in the air, and it tastes so, so sweet.
